I took sustainable tilapia, added my favorite Asian flavors and put it into a lettuce wrap and it won the Minnesota Zoo’s FishSmart Sustainable Seafood Recipe Contest!! It had the added bonus of being really delicious and healthy too (gluten-free and dairy-free).
