Day 30: Steak on the grill.
What could be more quintessentially summer than steak on the grill? We treated ourselves this week to two grass-fed beef rib eye steaks. We bathed them in a little olive oil and a spice rub then seared them to medium on the grill. K was going for medium rare, but grass-fed beef cooks more quickly than conventional meat — they were still juicy and amazingly, purely meaty. We also grilled some asparagus then topped it with a bacon and shallot vinaigrette. Can’t get more summer than that.
